You guys wont believe that these pizza triangles are healthy! No just healthy. Gluten free, can be vegan and no yeast, sugar, butter involved. So what's in them? Well you will see in the recipe below but lets just say they are WOWOWOWOOW!
Now, let's just talk flour, I am going to use almond flour which woked great here. It gave it a fun soft chewy texture and it really didn't need the gluten here. But! If you are not a fan of almond flour or if you're allergic, you can use corn flour as well. Corn flour is also a great healthy flour with the same texture as the almond. The only thing is, corn flour has a different colour so they might turn more yellow and the taste might be slightly not as the ones with the almond flour but it's still a good way as well. All that being said, all purpose, whole wheat, spelt flour are not the same and they will need to be treated differently so, almond and corn flour are our choices for this specific recipe!
Speaking of the ingredients, let's talk cheese. I am also using some cheese for this recipe because still, these are pizza triangles. So you have a hugeeeeeeeee collection of cheese in this world. You can use any hard cheese that you can grate and add to your triangles. And of course, you can use vegan cheese too! What ever you choose is great!!!!!!
Last but not least, for the filling, use what ever tomato sauce you have in hand. You can make it yourself, you can use store bought and for my very very very lazy friends, I am going to give ya a permission to even use ketchup. But don't tell anyone ok?
Other than the sauce and the tomatoes, you can add any other toppings like a real pizza; mushrooms, olives, corn, extra different types of cheese etc. And for my very creative friends, you can even choose a different theme for these little triangle guys. You don't have to fill the dough with tomato sauce and cheese. You can add veggies, tofu and anything you want! I will let you choose what because you have a whole world to choose from so do not be scared to try and be extra creative!

WRITTEN RECIPE
Ingredients:
+2 1/2 cups almond flour (read about the flours)
+1 tsp salt
+1/2 tsp baking powder
+1/3 cup olive oil
+1/4 cup water
tomato sauce + cheese + extra toppings for the filling
Instructions:
In a medium bowl, mix all the ingredients for the dough. You should get a pretty sticky dough but it should be fully assembled! You know you got the prefect dough when you can squeeze all the dough in your hands into a large and little sticky ball. If it's too dry and doesn't assemble, add a little bit more water until it does corporate.
Place the dough on a plastic wrap and cover. Freeze for 15 minutes.
After dough chilled, preheat oven to 350 degrees F.
Roll it and cut into circles using the end of a cup or a special circle cutter. You don't want the circles to be too thin because if they will be, they will tear apart. It might also be a little challenging to work with the dough because it is not the most stable dough. That being said, after you cut the circles, just use a spatula to trnsform the circles into a pan with a baking sheet and then use the left overs to repeat these steps. In the centre of each circle, pour one tsp tomato sauce + about a tsp of grated cheese + any extra toppings of your choice. You can really add anything else if you want! Make sure you don't over fill the circles though. Just fill the centre and leave some extra dough around the filling for you to work with.
Using your fingers, mash the outside dough that is around the filling and shape like a triangle. You can see more specific details and instructions in my instagram highlight/reel.
After all triangles are ready, place in the preheated oven for 25-30 minutes or until they get a nice gold and light brown colour.
