Healthier Version of a Dreamy Party Chocolate Cake

Who doesn't like chocolate cake? I mean WHO?????

I know people who try not to eat chocolate cakes because they're on a diet or trying to stay away from cakes but I honestly, I just can't live without cakes and chocolate. Sooooo that is the reason I said to myself.. well Hadar, you gotta find a way to make a healthy and TASTY HEALTHY chocolate cake. I didn't want to make just a healthy cake but I also wanted to be delicious and amazing so, yes! That's my recipe for now according to Oct 2020. Once I have a new recipe, I'll keep ya updated because you know what's it's like in the kitchen, you always find new recipes.

All about the base of our cake:

For the cake, we're going to use only Whole wheat flour! No all purpose flour needed but we have to sift the flour VERY WELL. For our sweeteners, I used 3 different ones: coconut sugar, honey and just a 1/3 cup of granulated sugar. You can switch the granulated sugar into more honey if you really don't want any of that in your cake BUT in my opinion, its okay to only have a bit of granulated sugar in this pretty big cake. It's all about the balance. We're not adding crazy amount of sugar, butter, flour, buttermilk etc in this cake so just a small amount is absolutely alright!


All about the frosting:

The frosting I made this time did involve some icing sugar BUT here comes a a big but! if you're not planning to put frosting all over and around the cake and you just want to put some frosting on top of the cake and maybe just in the middle layer, you can just mix some cream cheese, yogurt, vanilla extract and honey and that would be perfect and healthy. If you do want to make designs and actually work with the frosting you would need the icing sugar because it stables everything.

 

WRITTEN RECIPE

Ingredients:

- 2 cups SIFTED flour

- 3/4 SIFTED unsweetened cocoa powder

-2 tsp baking powder

- 1/2 tsp baking soda

- 1/2 tsp salt

-3 eggs

- 2/3 cup coconut sugar

- 1/3 cup honey

- 1/3 cup granulated sugar (can change to honey, read above about it)

- 2/3 cup milk

- 1/3 cup greek yogurt

- 1/2 cup veggie oil

- 1 tsp vanilla extract

- 1 cup boiling water

- 1 tsp espresso powder


- olive oil based margarine for buttering pan


For the frosting:

-3 cups cream cheese

-2 cups icing sugar

- 1/3 cup yogurt

- 1/4 - 1/3 cup honey

- 1 tsp vanilla extract

- 1/2 cup cocoa powder


Instructions:

  1. Preheat oven to 350 degree F. Line parchment paper at the bottom of a 9" round pan. You can use a bigger pan but you should expect a wider and thiner cake then. Butter pan with olive oil based margarine.

  2. In a small bowl / cup mix boiling water and espresso powder and set aside.

  3. In a medium bowl, mix sifted flour, sifted cocoa powder, baking powder, baking soda and salt together. Set aside.

  4. In a large bowl, Beat eggs until nice and fluffy. After about 5 mins of beating, add in granulated sugar slowly and beat again until smooth. After smoothing the eggs and the granulated sugar, while still whisking/beating add the coconut sugar, honey, veggie oil, milk, yogurt and vanilla extract. Beat until everything is mixed together and smooth.

  5. Slowly add 1/2 of the dry ingredients mixture into we ingredients mixture and using a spatula combine. Just before fully mixed, pour the espresso that we made earlier into the batter. Then add the rest of the dry ingredients mixture and mix until just fully mixed together. Do Not Over Mix!!!!

  6. Pour batter into our prebuttered pan and place in the oven for about 40 mins. {I suggest to open the oven 20 mins way through and check what's up with the cake. Maybe you will only need 10 more mins, maybe 15 and maybe 20. It all depends on your oven. }You know the cake is ready when you can stick a toothpick in the cake and it will come out dry.

  7. Mean while, let's make the frosting. In a large bowl, beat all wet ingredients together until smooth. Sift in the icing sugar and cocoa powder and mix until smooth and airy. And you're done!

  8. Chill cake for at least 15 mins in the pan and then take it out of the pan and chill it until it becomes room temp. Do Not add frosting when cake is hot! If you want to make layers, cut the cake either in half or 3 parts, pour some frosting in each layer and cover all around.

Anddddddd who ray! You are done! Time to enjoy some cake.


Notes***

*If you want 2 or more layers for the cake, you can also bake the cake in 2 or more same shape and size pans so you won't have to cut it.

*If you feel like your cake is only baking from the outside and nothing is happening on the inside while the outside is starting to burn, you can do something! Just cover the cake with foil paper and this will help the cake bake from the inside.
