Healthy Apple Cake

WRITTEN RECIPE

Ingredients

-2 medium size apples

-extra nuts (optional)

-1 cup almond flour

-1 cup sifted spelt / whole wheat flour

-1 tsp baking powder

-2 eggs

-1/2 cup sugar / honey (sugar will add more air to the cake but honey won't harm the cake)

-1/2 cup coconut sugar + for sprinkling

-1/2 cup veggie oil

-1/2 cup yogurt

-lemon juice of 1 lemon

-1 tsp vanilla extract

For the cinnamon swirls :

-1/3 cup coconut sugar

-1 tbsp cinnamon powder

-2 tbsp plant based margarine


For the glaze: (oprtional)

Mix yogurt + honey + lemon juice

Instructions:

  1. Preheat oven for 350 degree F. Line baking sheet & oil 9" round pan ( you can make this recipe as cupcakes/ loaf cake or any size/shape wanted. Thickness of cake may change recording to the size of the cake. )

  2. Sift and mix almond flour, whole wheat / spelt flour and baking powder.

  3. Whisk together eggs, sugar/honey, coconut sugar, veggie oil, yogurt, lemon juice and vanilla extract very well until smooth.

  4. Pour wet mixture into dry mixture. Just before everything is fully combined, add chopped apples and other nuts if wanted and mix well.

  5. Pour batter into oiled / buttered pan and sprinkle sugar on top of the cake. Bake in preheated oven for about 30-40 mins.
