Hello my dear bakers, today, I am back with a new super cool healthy recipe! Since we're getting into one of the most beautiful times of the year, THE FALL season, I was in the mood for a fall and cozy vibe cupcakes. Yes yes and not just cupcakes but of course, healthy ones!
These cupcakes are so simple to make but the flavour.. oh the flavour is absolutely amazing! It has it's unique charming cinnamon vibes and the touch of the apple chunks just does it all (is it weird that I describe my cupcakes as charming? haha well.. I don't know anymore:)
For this recipe we will use whole wheat flour only!!! BUT please please please do not forget to sift the flour!!!!! IT'S SO IMPORTANT!!!! Now, I feel like I don't talk about the what kind of fat to use enough so let's have a small talk about it. I love olive oil based margarine BUT and here comes a bigggg BUT! When using margarine or butter, its normal texture is solid which means if you add margarine/butter in a cake, it will bake nicely and it will be soft when warm but after chilled, it will be pretty hard.
And here comes the oil!!! I love veggie oil. I find it better than olive because of the strong olive flavour. I also find it better then coconut sugar because first of all, I don't like strong coconut flavour in my bakings all the time + the coconut oil normal and natural texture is almost a solid as well. All that mentioned, veggie oil is healthy and a liquid that will help the cake stay nice and moist even after cooled and chilled.
Also, if you noticed, I used silicon cupcake cups which I absolutely love and recommend because you don't need to oil or butter the cups and for me it saves so much time and waste as well. You can also use a silicon cupcakes tray and if you're using this one, you don't need to use cupcake cups at all. You can buy these products at every kitchen appliances store and also on amazon. Amazon has a great collection. Adding on, there are also lots of cool designs of silicon cups and trays. I used a silicon roses shaped cupcake tray for a beautiful lemon mini roses cake.

WRITTEN RECIPE
Ingredients:
Apple filling:
- 2 tbsp coconut sugar
- 3 medium chopped apples
- 1/2 tsp cinnamon
- 2 tbsp olive oil based margarine
Cupcakes batter:
- 1 1/2 very well sifted whole wheat flour
- 1 1/2 tsp baking powder
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- pinch of salt
- 3/4 cup brown sugar (can use coconut sugar instead)
- 2 large eggs
- 3/4 cup veggie oil
- 1 1/2 tsp vanilla extract
- 1 tsp apple cider vinegar
- 1/2 cup milk of your choice
Glaze:
-2/3 cup plain whole milk yogurt
- 1tbsp honey
+ 1 tsp cinnamon for sprinkling if wanted
Instructions:
On top of a medium sauce pan on top of a preheated medium heat stove, cook all of the apple filling ingredients for about 8-10 mins or until soft and light brown.
Preheat oven to 330 degrees F and get your silicon cupcake cups ready (read about it above). You can also use paper cups.
In a medium bowl mix together sifted flour, baking powder, cinnamon, nutmeg, and salt.
In a large bowl, beat eggs and sugar until nice and fluffy. After 5 mins of beating, add oil, apple cider vinegar, vanilla extract and milk. Beat well.
Into the large bowl of the wet ingredients mixture, slowly beat in the dry ingredients mixture. Beat until combined. Do not over mix.
Pour the batter into the cupcakes cups. Top each cup with about a tsp of the chopped apples from earlier.
Bake in preheated oven for 20-25 mins or until nice and soft and brown.
While letting the cupcakes chill, in a small bowl, mix the yogurt and the honey and then pour about 2 tsp on each cupcake. For an extra taste, sprinkle some cinnamon on top.
