Hello my bakers! Today is a very exciting day in the kitchen! Oh well, the holidays are at the door and guess what? We are baking sufganiyot! My jewish and Israeli friends probably know what sufganiyot are but for those who don't know, they are pretty much like donuts but... how can I say it... they have that special element that just makes them special! Now, of course real sufganiyot are fried but! Who says we can't enjoy a healthier version as well?
These sufganiyot are really really good! They are super soft, sweet but not too sweet and they are easier to make than what you think.
For the flours, I used %75 whole wheat flour and %25 all purpose flour. You can use %100 whole wheat flour. I have done that before and it turns out really good too! But! I fount out that %25 of all purpose flour really adds a lot of lightness so its up to you and what you prefer! You can also only use all purpose flour but if you do, make sure you watch out for the amount of liquids you use!
For the liquids, we are using 2 eggs, 3/4 cup milk, 2/3 cup water. Yes yes no oil in the dough! The only thing you have to watch out for is if you change the flours. If using more or only all purpose flour then you will definitely have to use less water. The dough in the end should be very soft and almost sticky as well. So, when you are adding the water, add it slowly and see how much you need to add. Maybe you'll need more or less than me!
I also made these sufganiyot by hand, meaning I didn't use an electric mixer but if you prefer using the mixer, just do all the exact steps with the mixer.
For the toppings and the filling, you can really go as crazy or as basic as you want! I filled some with jam and topped with icing sugar. For the others, I filled with some vanilla filling or chocolate filling or even some brownie chunks. I also made cinnamon sufganiyot. So, just go with what ever you like! WRITTEN RECIPE:
Ingredients:
-3 cups whole wheat flour
-1 cup all purpose flour
-1 tsp yeast
-1/3 cup sugar
-2 eggs
-2/3 cup milk of your choice
-1 1/2 tsp vanilla extract
-1/2 cup water
-pinch of salt
-olive/veggie oil for topping the Sufganiyot
-toppings+fillings of your choice
Instructions:
Sift all the flours together into a large bowl. (for notes on the flour, read at the beginning) -this step is SUPER important!
Into the bowl with the sifted flour, add the yeast and the sugar. Mix well.
Into our dry mixture, add the eggs, milk, and vanilla. Start mixing everything together.
At this point, start adding the water slowly. You may need more or less water than me depending on your flour and room temperature. After the dough starts to get together, move it on to a floured clean surface.
Knead the dough for 10 minutes.
Place the dough into an oiled large bowl and make sure the dough is oiled from all sides. Let rise for 2 hours.
After 2 hours, remove the dough from the bowl, and make balls from the dough. I made 16 medium size sufganiyot. Also, remember, the balls will rise more so don't make them huge from the start becuase later, they will become even bigger. Also, try to make them as round as possible so they will have a nice round shape. And! Make sure you don't make them flat beucause they will become flat and thin. You want nice balls.
Place all the balls on a large baking pan. You may need to use 2 pans. Make sure you leave about 2-3cm gap in between. Before, you let the sufganiyot rise again, oil them with a brush and then cover and let them rise for another 30mins.
At this time, you can preheat your oven to 330 degrees F.
After 30 mins, brush the sufganiyot with some more oil and bake in preheated oven for about 10-15 minutes. The sufganiyot should get a nice gold colour and be nice and soft. Don't wait for them to really get brown! If they will, they will be dry.
Decorate with whatever you want and enjoy!!!!!!!!!!!
