I can officially announce that pancakes are my absolutely favourite breakfast dish. You know, when you’re a kid, pancakes are like heaven for you. Now, let’s be honest here, who grew up on healthy pancakes? Who? Not me at least and I bet that 99% of you haven’t as well or maybe even 100% of you guys. Anyway, it’s never too late. Where ever you are right now, in your teen years, maybe you’re a parent, a grand parent or just living your life, ITS NEVER TOO LATE! So why don’t you start making a change? Why not? It’s such an easy powerful change. Imagine how cool it would be if you could make your kids a healthy but so delicious and sweet breakfast. Imagine you making your loved ones this breakfast and serve it right to bed. Imagine a nice morning of you making YOURSELF the most dreamy breakfast and at the same time keeping it healthy. Isn’t that great? I know it is!
This specific recipe is not vegan but you can of course make it vegan by simply removing the eggs and adding a bit more milk if batter is too ”hard” and stif.
About the milk, it’s really up to you which milk you want to use. I don’t have rules here. I always use whatever I have at home. I do love using nut milk though! It’s great, healthy and also vegan!
When serving these pancakes, you can really be creative with the design. You can serve it individually in separate plates, you can place it on a large plate, you can top it with honey, butter, peanut butter, almond butter, berries, banana and so much more. You can really be creative here.
Alright, enough with the chatting, LETS GET BREAKFASTING
WRITTEN RECIPE
For a size of about 2-3 servings
Ingredients
- 1 1/2 + 1 tsp cups whole wheat sifted flour -separated
- 1 tsp baking soda
- 1 scoop protein powder (about a 1/3 - 1/2 cup)
- 2 bananas
- 3 eggs / 1/3 cup nut milk
- 1/2 cup veggie oil
- 1 cup milk (of your choice) - separated - 3/4 cup blueberries (can add more or less - it's your choice)
- 1 KG OF HAPPINESS
Instructions
In a large bowl, mash bananas. Add eggs/milk & veggie oil and whisk until nice and smooth.
Sift in protein powder and mix well.
Add 1/3 cup milk and mix again.
Add 1/2 of the sifted flour and mix once more.
Add 1/3 cup of milk again and mix.
Add rest of sifted flour and mix.
Add rest of the milk and mix for the last time.
Mix blueberries + 1 tsp flour together and add to batter and mix for the very last time;)
Cook on a pan on top of a preheated medium heat stove for about 2 mins on each side. If you want very thick pancakes, make thicker circles each time and cover with lid to let rise. If you want thiner pancakes, make sure you make each one thiner on the pan. Don't mash them in the end!
After pancakes are ready place on a large surface with paper towel and soak any oil that is left on the pancakes.
