Healthy Delicious Protein Cookies

Watch out! I think I have new addicting recipe!

What's up my friends? Welcome back to my blog. Today is a special day! You know why? Because today is the day that you found a new HEALTHY and DELICIOUS and filled with PROTEIN and so SIMPLE to make cookies recipe! I really mean it, you are going to get addicted to this. I know I have quit a few addicting recipes but currently this is the "addicting pro" recipe:)

Anyway, you are also going to be amazed by how so many great healthy ingredients make these cookies. We are going to use :

Olive oil based margarine:

for my dear bakers that already know me, know that I LOVE using this because it's so much healthier than a normal fat based margarine or butter. Adding on, it's not like coconut oil that adds a strong flavour of coconut that I'm not a big fan of but this magic ingredient makes everything work! Almost like butter but healthy!!!!


Almond flour & whole wheat flour:

Let's talk about the almond flour first! If you know me well enough, you will also know that my kitchen won't be my kitchen if I don't have almond flour in it. Almond flour is just amazing! Soetimes I can't believe that someone actually thought of making a flour out of almonds. I mean think about it, it's low in carbs, packed with nutrients and has a sweeter taste as well! Isn't that GREAT? Also, almond flour is gluten free of course so if you're looking for a gluten free recipe, you can only add almond flour instead of both almond and whole wheat.


Speaking of whole wheat flour, whole wheat flour is also amazingly great! Think about it, it's a great source of protein, fiber, and a variety of vitamins and minerals. It has way more iron, calcium, protein, and other nutrients then white flour of course so why not use it when you can?

Bananas!

Well well... you might say that I don't have to say anything about them because of course bananas are good because they're a fruit. But that's not all! When you are adding bananas into your baking, you're adding so much more than just more vitamins and minerals! You are adding a natural sweetener - natural source of sweetness instead of adding huge amounts of other sources of sugar. That's not it! Bananas also give you great texture! Instead of adding more butter or anything else for texture, why not add bananas? Well, mashed bananas of course;)


Last but not least: PROTEIN POWDER!!

You know, protein powder is a pretty challenging ingredient to get into your meals and drinks during the daily basis. We try to add it to smoothies, water and even hot drinks but sometimes it just doesn't taste right. In these cookies, the protein powder only helps because it add sweetness, vanilla flavour and lots of protein of course! On your right, you will see the protein powder I use at home but there are a billion of options out there so just search for YOUR favourite one.

You can also use cocoa flavoured protein powder and then you will get healthy chocolate cookies.



Without further ado, LET'S GET BAKING!!!


 

WRITTEN RECIPE

Ingredients:

- 2 bananas

- 1/2 cup olive oil based margarine

- 1/2 cup coconut sugar

- 1 tsp vanilla extract

- 1/4 cup milk

- 1/2 cup almond flour

- 1 cup wholewheat flour

- 3 scoops / 2/3 cup protein powder

- 1/2 tsp baking powder

- 1/2 - 3/4 cup dark chocolate chunks


Instructions:

  1. Preheat oven to 350 degree F. Line parchment paper on 2 regular size cookie pans and set aside.

  2. In a medium bowl, mash bananas and beat with olive oil based margarine. Beat until nice and combined.

  3. Into the bowl, add in sugar, vanilla extract and milk and beat until smooth.

  4. Into the same bowl, sift all dry ingredients and mix well. Just before fully combined, add in chocolate chunks and mix well.

  5. Cover and chill the cookie dough in the fridge for 20 mins. - OPTIONAL! If you do, only preheat the oven now.

  6. Using a spoon, piping bag or a cookie scoop make your desired shape and size cookies. The cookies will spread a bit so don't make balls but don't flat them too much. Sprinkle some coconut sugar at the top for an extra flavour and texture.

  7. Bake in preheated oven for about 10 mins or until nice and gold.
