Who ray!!! The holiday season is almost here and I already prepared you an amazing dessert idea and recipe! And of course, like always... IT IS HEALTHY!
This crumble is going to... just... blow your mind!! I mean, it's so airy and tasty and has this rich flavour of cinnamon flavour but also a bit lemony and apply and crumbly anddddd uhhh... you just have to try it to understand. As you already know me.. you also know that I love keeping my recipes nice and easy and that's what I did here as well! I mean, why complicate things when less is better and when easier sometimes is just tastier.
***Lets talk about the sweetener for just one sec before we get into baking. In this recipe, I'm using 2 different sweeteners. Coconut sugar and granulated sugar. Yess I'm sorry that you have to see these 2 words in my blog - "granulated sugar" but! here's comes a big but because I find this sugar just adding all I needed in this crumble. You can of course not use it and add more coconut sugar but to get that airiness, the lightness and the nice light beautiful colour, you need this sugar, not honey or coconut sugar. You understand me? Don't tell me I didn't tell you! Alright! So just make your decision but hey, just a bit of sugar in a whole healthy recipe isn't that bad!!! Right? But!!!!!! I also love using protein powder! It doesnt turn out as sweet but it's really good and much healthier! So yes! I do change the sugar into vanilla protein powder sometimes. Also, I also change the coconut sugar into honey as well!
Sooo yes, now you heard how good it is + how easy it is to make so now it's your turn to try!
Common, add some more flavour into your holiday dinner, or maybe just a family dinner or night out dinner with your loved one! Soooo let's get baking!!!
WRITTEN RECIPE
Ingredients:
-3 & 1/2 cups almond flour
-1 tsp salt
-1/2 cup sugar / protein powder(read my opinion about the sweetener at the top)
-3/4 tsp baking powder
- about 3-5 tbsp + 1 tsp olive oil based margarine (pic at the bottom)
-6-7 medium size apples
-lemon juice of 1 lemon
-1 1/2 tsp cinnamon
- 2 1/2 tbsp coconut sugar / honey
-thin sliced almonds for topping (totally optional)
Instructions :
Preheat oven to 350 degree F.
Start by chopping apples into medium size cubes (watch video to understand better). Cook apples on top of a large sauce pan with lemon juice, cinnamon and coconut sugar on top of preheated medium heat stove until apples soften but not fully cooked.
To make the crumble, mix almond flour, baking powder, salt and margarine in a medium bowl until you can squeeze some of the crumble mixture in your hands and it will stick together. You may need to work with your hands. Cover bowl and let chill in the refrigerator for 15 mins.
Spread 2/3 of the crumble mixture in your buttered pan. It doesn't have to be perfectly straight because it's a crumble after all. Add all of the apple mixture and spread rest of crumble mixture on top for the last layer. Last but not least, add sliced almonds if wanted.
Cover pan with foil paper and bake in preheated oven for 20 mins. After 20 mins, take foil paper off and bake for another 15 mins.
Anddddd whohooo! THE CRUMBLE IS READY!!!
***IMPORTANT NOTES***
- if you are allergic to nuts, you can use whole wheat, spelt or even all purpose flour instead of almond flour & you don't have to add sliced almonds
-if you don't have olive oil based margarine, you can use a different plant based margarine and if you don't care about how healthy this crumble will be then use any butter or margarine you want. You can also use coconut oil but watch out, the crumble will have a pretty strong coconut flavour.
