Healthy Lemon Blueberry Cake

This amazing Lemon Blueberry Cake will blow off your mind by the fact that it's so simple to make but soooooooooo delicious and totally worth giving it a try! This cake is a great cake for any occasion! Really! It's nice and simple but not too simple! It could be great for a family dinner dessert, friends gathering snack, or even just to have a delicious healthy cake in your fridge through out the week. I mean, what's better than having a slice of a Lemon Blueberry Cake in between all you have to do during the week and just having a slice of happiness to charge you on!

This delicious (did I already mention that this cake is so delicious? haha:) Anyway, this delicious cake made from ONLY NATURAL & HEALTHY ingredients such as spelt or wholewheat flour, veggie oil, honey, coconut sugar, blueberries, and a lemon etc... This cake just sounds too healthy to be true, right?


I used my bundt cake pan for this particular recipe but its of course not necessary! If you're not a fan or maybe you don't have a bundt cake pan, you can definitely make it in a loaf pan, a round cake pan or you can also make it as cupcakes and really, just get creative with it! No rules in this case!


So without further ado... LET'S GET BAKING!!!


 

Ingredients

  • 3 cups flour of your choice (I used whole-wheat & spelt flour - 1/2 & 1/2)

  • 2 tsp baking powder

  • 1/2 tsp salt

  • 3 eggs

  • 1 cup veggie oil

  • 1/2 cup honey

  • 1/2 cup coconut sugar

  • lemon juice & zest of 1 whole lemon

  • 1 tsp vanilla extract

  • 1 cup milk (of your choice)

  • 1/2 cup blueberries (can add more if you like lots of blueberries in your cake)

Instructions

  1. Preheat oven to 350 degrees Fahrenheit. Generously butter and flour your pan. (This step is very important! Especially if you're using a bundt cake pan.)

  2. Sift & mix flour, baking powder and salt together in a medium size bowl. You can skip the sifting step but I really recommend sifting because it add lots of air to the cake and this step avoids any big clumps or chunks of flour in the cake.

  3. Beat eggs until nice and smooth for about 5min. Add sugar gradually and beat for another 5min or so. Then add on the honey, veggie oil, lemon juice & zest, and vanilla, then beat everything until everything is just mixed well.

  4. Time to add on the flour mixture into the wet ingredients mixture gradually. First add on a 1/2 of the flour mixture into the wet ingredients mixture, then mix just until you almost can't see any flour left. Then, add milk and mix well and add rest of the flour mixture. Before everything is fully corporate, add on blueberries*. Mix well but DO NOT over mix.

  5. Pour your cake batter into your pan, bake in your preheated oven for about 45min.*

  6. Enjoy your cake!

*Before adding blueberries into the cake batter, I suggest to mix it with a tbsp of flour beforehand.

*I suggest you, after putting the cake in the oven, check on it after 20min and then cover it with foil paper for the rest of the time to avoid the bottom of the cake to burn and the inside being not ready. After 45-50 min you should be able to stick a tooth pick in the middle of the cake and get it out dry. Although it might take a little bit less or more time since every oven is different.


*Better if all ingredients are room temp in this recipe!
