Healthy Super Fun Cookies

These cookies are just something from a different world. They're are perfectly perfect for any holiday or celebration and yes, Valentines is right at the door sooooo this is an idea for you as well, just saying:)

They are gluten free and you have an option to make them vegan! They're very simple and super yummmmmm! So I won't talk much this time and let's just get to the recipe!



 

WRITTEN RECIPE

FOR ABOUT 10 MEDIUM COOKIES

{Feel free to double/triple etc the recipe for more cookies}

Ingredients:

😍2 cups almond flour

😍1/3 cup olive oil based margarine (you can use any melted margarine/butter)

😍 1/4 cup honey/maple syrup


+anything you want to fill the cookies with such as jam, chocolate etc :)


*you can also make these cookies without any topping/filling! They will also be good plain beside your tea or your coffee;)


Instructions:

  1. In a medium bowl, mix the flour, melted margarine/butter and the honey/maple syrup until fully mixed. You should get a soft and sticky dough in the end. If for some reason your dough is too dry, just add a little bit more water until becomes a dough.

  2. Cover the dough and freeze for 15 minutes. You can cover the dough in the bowl or transfer the dough into a plastic wrap and freeze it this way. Both ways work great!

  3. Preheat oven to 350 degrees F.

  4. After dough chilled, divide into equal balls and make a hole in the centre of each ball. You can make your cookies as big or as small as you want!

  5. Place all cookies on top of a baking sheet and bake for about 20 minutes or until cookies get a nice light gold colour. The cookies will be pretty soft when they come out of the oven but after chilled they will be perfect! So watch out! don't try to get them to be very hard right after they come out of the oven!

  6. Fill the hole in the cookies with anything you want! Feel free to really be creative here! Let chill for a couple of minutes.
