Healthy Vegetarian Rice Paper Lasagna

Who doesn't love lasagna? Can you believe that a vegetarian & healthy lasagna can be even better than a normal lasagna? It's one of the best ways to feed a crowd and just a perfect dish to bring to a family/friends dinner or for any occasion. Lasgana also freezes very well! It reheats well as well! And leftovers will always keep you happy!!!!!!!!!!!!!

Funny thing is that I don't like cheese and when I make lasagna that is eatable for me, I just add vegetables instead of the cheese. That being said, I always make lasnas with cheese for my family.

This lasagna recipe is just perfect for my lasagna lovers that try to eat healthy because honestly, except for the cheese, everything in this recipe is super healthy and is actually good for you. This lasagna is made out of 3-4 different layers which repeat themselves all the time; rice paper layer, tomato sauce, cheese / veggies or both. As in a normal, not healthy lasagna, the noodles layers are the part that ruins the chance of it being healthy, but here, we got the rice paper which changes the whole story. Other than that, we are going to make the tomato sauce our selves, and we're keeping it 100% natural.

Also, this lasagna is vegetarian, so not meat layer, but f you're not vegetarian and you want to add that extra layer it's up to you.


 

Ingredients

  • 5 rice paper, can use more or less - IT'S UP TO YOU (see the pic of the rice paper that I used down below)

  • 1 tbsp olive oil

  • 1 large chopped onion (didn't use an onion in the video but you can of course add it to your sauce)

  • 1 clove chopped minced garlic

  • 2 medium zucchini - 1 sliced & 1 shredded

  • a few spinach leaves (optional)

  • 4 fresh basil leaves (chopped)

  • 4 large chopped tomatoes

  • 1 tsp paprika

  • 1/2 tsp garlic powder /onion powder - up to you:)

  • 1 tsp + a pinch of salt

  • fresh thyme (optional)

  • 3/4 cup shredded cheese (of your choice)

  • 1 tsp + a pinch Herbs De Provence


Instructions

  1. Tomato sauce:

In a pan, on top of your preheated stove, add in oil, once hot, add chopped tomatoes. after some juice gets out of the tomatoes, add on 1/2 of your shredded zucchini.

Add on a 1/4 cup tomatoes sauce, then stir & mash your sauce. Stir in all your spices, Herbs De Provence & garlic, basil and thyme. Stir everything until becomes a nice liquid sauce and once ready take off from the heat.

2. Prepare all layers

Mix your sliced zucchini in a bowl with a pinch os salt and a pinch of Herbs De Provence. Then, make sure you get your shredded cheese ready.


3 . Assemble Time!

In your pan, start by placing 2 of your rice paper sheets for the base. Then, pour about 1/2 cup of your tomatoes sauce. next layer, add 1/2 of your sliced zuchinni. Then, add cheese or skip this part if you're vegan. Next, is another rice paper layer (from now on just 1 sheet.) Next, tomatoes sauce. next is the cheese layer & I put cheese on half of the lasagna and the some of the shredded zucchini for the other half. Next, rice paper layer, then, tomatoes sauce, rest of the sliced zuchinni and another rice paper layer. Last bu not least, the rest of the tomatoes sauce, and again, 1/2 of the lasagna with cheese & 1/2 with the shredded zuchinni and you're DONE!


Layers of the lasagna:

  1. 2 rice paper sheets

  2. 1/2 cup of tomatoes sauce

  3. 1/2 of your shredded zuchinni

  4. some cheese if wanted

  5. 1 rice paper sheet

  6. 1/2 cup tomatoes sauce

  7. cheese & zuchinni

  8. 1 rice paper sheet

  9. 1/2 cup tomatoes sauce

  10. the rest of the sliced zucchini
